However Chris Holstein said there is a lot of cleaning and maintenance to complete before customers can sit and enjoy all the cafe has on offer.

"We're in no rush to open as we want to make sure it's right," he said.

The opening is also dependent on whether restrictions under the coronavirus pandemic will ease to allow visitors to the area.

Mr Holstein and his wife Mary bought the property two months ago after first visiting the village when they were newly weds back in the 80s.

The couple decided to make the move to the area from the Central Coast, seeking the quiet life on offer in Comboyne.

"We're seeking a slower lifestyle," Mr Holstein said.

"Have you ever sat on a back deck, looked up at the sky full of stars and enjoyed the silence?"

"That's what we've experienced here."

Mr Holstein said the coronavirus pandemic has made a lot of people reassess what they want out of life.

He never thought he would move from the Central Coast but was attracted to the new project which the Udder Cow presented.

"I need to keep mentally and physically active even in semi retirement," he said.

Mr Holstein and his wife believe they were meant to end up owning the Udder Cow, given their last name is a breed of dairy cow.

"Someone asked us if we changed our name just to fit in with the cafe," he said.

Mr Holstein said his family have been in Australia since 1849 after settling at Cox Creek, east of Mudgee.

Mr Holstein's vision for the cafe is for it to be somewhere where people can come, relax and eat food cooked in a traditional way to showcase local produce.

He hopes the cafe will complement what is already on offer to those who visit Comboyne.

The Holsteins have owned a variety of businesses since the late 80s including a corner store, flower shop and industrial takeaway.

They have been married for 41 years, have five children and eight grandchildren.
