He will be joined by Newcastle's Robert Thraves and Sydney's Andrew Donn Patterson.
The 'low and slow' style barbecuing trio will be supported by visiting pitmasters at the Live at the Smokehouse event at Westport Park in Port Macquarie from 5pm to 9pm.
The mouth-watering 500-person outing is expected to run over four hours, featuring live bands including Ash Grunwald and Brad Cox.
Mr Roberts, who runs Cue Deli barbecue cafe in Port Macquarie, said this event is the perfect outdoor food festival to end 2020.
"It's a bit of a friendly match-up. We will be trying to serve the best food we can and make sure visitors have a good variety to choose from," he said.
"Thraves is from Smoking Hot and Saucy in Newcastle and Andrew is from Black Iron Smokers in Sydney.
"To be a pitmaster it can take years of cooking on wood-fired barbecues, grills and smokers.
"Unlike an oven or a pan, you do have to regulate your fire, your fuel and the overall temperature. So it can be quite tricky and take a lot of skill to build the best fire you can.
"The attraction of being a pitmaster is good food and playing with fire. Realistically it's very technical and can be quite high tech these days with digital thermometers."
Mr Roberts said he would be drawing on visits to Texas and some experience with Texan and Mexican flavours for the event.
"We are going to do a Tex-Mex inspired tasting box with tacos three ways. It will be a little bit of a surprise because Tex-Mex has a fusion of wood fired barbecue with salsas, guacamole and tacos," he said.
"I'll try to produce the best tacos we can."
Attendees are encouraged to BYO deckchair for the event on December 12.
This is a ticketed event.
