Latimore signed a one-year contract extension with the Red V last August and he will take his place at Kogarah Oval in the club's first pre-season trial match for 2019.
The 31-year-old journeyman played in all but one of the Dragons' first grade games in 2018 and has provided valuable influence for the wider squad's younger forwards.
Latimore had a relatively injury-free season last season, but knows he will be challenged by young players in 2019 such as Blake Lawrie, Jacob Host and Luciano Leilua.
Saturday night's match kicks off at 6.30pm and will be live streamed on the Dragons website.
The Dragons will then face South Sydney in the annual Charity Shield clash on Saturday, March 2 before their season-opener in Townsville on March 16.
