Whether you have a charcoal or gas barbecue it doesn’t matter - anyone can plate up a feast like this and wow your guests on Australia Day.
A simple dry rub that you can use to bring an extra depth of flavour to any meat is simple: mix black pepper and salt (a couple of table spoons of each) with a teaspoon of onion powder, garlic powder, cumin and paprika.
Sprinkle it generously on pre-cook while your barbecue fires up and you’re good to go.
