The William Street accommodation provider won the deluxe accommodation category as well as the Qantas Award for Excellence in Sustainable Tourism.
The winners were announced at Sydney's Dockside Pavilion.
Port Macquarie MP Leslie Williams congratulated The Observatory Hotel on its outstanding achievements at the NSW Tourism Awards.
"Congratulations to Chris and Trish Denny on winning these awards which recognise their exceptional contribution to our local tourism industry," Mrs Williams said.
"Our region has so much on offer for domestic and international visitors and I am delighted that our wonderful tourism products were recognised at this year's NSW Tourism Awards.
"This is a true testament to the quality products and experiences that are produced in our region that continuously draw people back year after year."
Six Hastings tourism operators were finalists in the NSW Tourism Awards.
The awards celebrate and acknowledge tourism businesses that demonstrate outstanding achievement throughout the year.
Minister for Trade, Tourism and Major Events Stuart Ayres said it was an honour to be at this year's NSW Tourism Awards and congratulated the individuals and businesses on their outstanding accomplishments over the past year.
The 2015 NSW Tourism Awards are made up of 29 categories including a range of tourism areas such as major tourist attractions, ecotourism, destination marketing, accommodation, tourism education and training.
