The Whalebone is proud to be a sustainable restaurant, sourcing 70% of produce from local providores and suppliers.
The majority of fruit and vegetables used in the restaurant come from our own organic kitchen garden. The chefs cultivated the garden in 2016 and they are proud its success continues to blossom as they plant more fresh produce.
“We use all bio-degradable scraps from the restaurant in the compost which in turn helps the garden grow, creating a natural self-sustaining cycle. We have also installed many energy saving initiatives and are currently smashing our targets of zero waste and sourcing 100% local produce by 2020.
“In the summer of 2017 with the help local builders and designers, The Whalebone Wharf will be transformed into a state of the art water front venue unsurpassed in this region.”
“We will be the Mid North Coast’s number one destination catering for all-day dining, breakfast and coffee lovers.”
