And some might think it surprising that a lot of Simpson's preparation comes down to eating.
He said the average person should eat about 2000 calories per day.
Simpson consumes a whopping 6000-7000 calories a day.
He usually kicks it off with eight eggs and 200 grams of meat for breakfast followed by a "big" shake two hours later.
It is usually made up of fruit, protein, milk and peanut butter amongst other things.
"The peanut butter boosts the calories and has good fats in it with the nuts," he said.
The afternoon is taken up with rehabilitation work in the form of stretching and soft tissue work.
Simpson will then down a heap of Vietnamese rolls before going to work as a trainer.
He then heads to his own training from about 10pm for two or three hours.
Before bed Simpson will eat for almost an hour straight.
"Things like rice, meat, pasta or salmon," he said.
"And then I will top it off with ice cream."
Simpson will be on hand during the NSW Regional Strong Man Series held by Port Macquarie's High Performance Centre.
He will perform several impressive demonstrations throughout the day.
It will be at the Town Green on May 10.
