Dennis Borg, 50, from the western Sydney suburb of Doonside, was involved in an eight-hour stand-off with police at the Oxley Hwy restaurant on June 17.
He fired a number of shots inside the restaurant during that time, and numerous customers were evacuated.
Mr Borg was brought from custody to appear in the Port Macquarie District Court on Monday morning.
He pleaded guilty to firing shots at the restaurant with “reckless disregard for the safety of other persons”.
He also pleaded guilty to possessing an offensive weapon with intent to prevent lawful apprehension.
The matter has been adjourned to April 23 for sentencing.
