"Whenever I see him now I get tears," he said.
"I'm absolutely elated and I'm enjoying every minute of spending time with him.
"I feel like we've already bonded."
Mr Baker's plane touched down in Port Macquarie on Sunday, November 14 after a long journey from his home near the city of Norwich, north of London.
Mr Baker's daughter Stephanie, her husband David and baby Josh live in Port Macquarie and have been isolated from family for years due to the coronavirus pandemic.
Stephanie said it's been tough being so far away from family throughout her pregnancy and Josh's first year of life.
Travellers are required to undergo many checks prior to their departure, including a negative COVID-19 test and approval of documentation for their stay.
Stephanie said there are many barriers to overcome before people even step foot onto a plane.
"It's hard for people," she said.
"All your ducks have to be lined up and it just adds to the stress."
Mr Baker's wife Josie has been delayed in travelling to Australia, as her visa has not been approved.
She's hoping to travel at the end of November.
Mr Baker has brought COVID-19 test kits with him from the UK.
He was required to take a test on arrival in Port Macquarie and will need to take another after seven days.
Mr Baker said he wasn't nervous about the prospect of travel, despite concern over rising COVID-19 cases in the UK.
"We've kept ourselves as safe as we can," he said.
"My 91-year-old mother-in-law lives with us, she would be a vulnerable case and so we like to stay out of contact with people where we can."
Mr Baker travelled on empty planes, where he had entire rows of seat to lie down on.
He's enjoying the weather in Port Macquarie, given it's winter back home.
"But the sole reason why I'm here is because of Josh," he said.
