About 3.15pm on April 8, emergency services were called to a correctional facility at Kempsey, following reports an inmate had suffered multiple stab wounds.
Police will allege two inmates - aged 50 and 28 - approached the cell of a 26-year-old man before he was stabbed several times in the neck, chest and back.
The injured man was airlifted to John Hunter Hospital in a critical but stable condition.
Officers from Mid North Coast Police District attended a short time later and established a crime scene.
The two men - aged 50 and 28 - were arrested, with the older man charged with attempted murder and the younger man charged with aid and abet attempted murder.
Both were refused bail to appear at Port Macquarie Local Court via AVL on April 9.
