A multicultural blend of food stalls, festivities, music, kids rides and games is scheduled to be unveiled from 3pm to 9pm at Port Macquarie racecourse on Friday, January 3.
Foodies of all ages are lining up for the festival's dedicated dessert section and more than 35 international cuisine stands.
Visiting vendor operator, Alicia Karimi from Chucks Burgers, said they are featuring their big American style burgers with loaded fries including their specialty triple burger.
"It's usually very busy and people come out to try all the different styles of food," said Mrs Karimi.
"There's something there for everyone and if you're there you won't be disappointed. You can always find something you'll like.
"At first some people are a bit scared of our triple burger but we always get people coming back to get them. We always have someone each day who gets one.
"At the fair there are many different types of burgers, meats, dumplings, pizzas, Asian style food and they cover pretty much everything."
Organiser Sam Adams explained the event's genesis to the Great Lakes Advocate and how it has expanded from the city since being established in 2015.
"Initially the markets started as a way to bring the community together in Sydney," he said.
"We wanted to give the community a large variety of different food stalls and something for the whole family to enjoy and from there it has grown to be a huge weekend event which includes shopping opportunities and rides for the kids.
"We then decided to explore coming out into the regions.
"When people arrive there will certainly be the wow factor with lots going on for everyone to enjoy."
Entry is by gold coin donation and under 12 years are free entry. $20 wristbands are available for unlimited rides on the night.
The festival is continuing its tour to Forster on January 4 and Newcastle on January 5.
