The Sharks have appeared in the last four grand finals, losing the last two in a row after they won two-straight in 2015-16.
They held on to beat Macleay Valley 18-12 last weekend in a match where the Mustangs bombed at least four tries.
Joining them in week two of the finals at Wingham will be their under-18 counterparts who are defending premiers following a 12-8 win over Old Bar in last year's grand final.
They held on to beat Wingham 24-20 last weekend to also set up a showdown with the Breakers at 12pm on Saturday.
