The Charles Sturt University graduate tragically passed away just after graduation in 2016 during a holiday to the Cook Islands, and is now remembered through a memorial scholarship.
The scholarship goes towards helping future paramedic students from Port Macquarie study at CSU, such as 2018 recipient Tahlia Rance and Emily Everett in 2019.
The major fundraiser 'beach babe, boardie bling' themed cocktail party with games and prizes was held at Rydges Hotel on May 17.
The event also featured the auction of a surfboard donated by Black Square, won with a bid of $1000.
CSU Port Macquarie student liaison officer Ruby Simmons said about 100 people attended this year.
"This year has been a better turn out than last year. People danced and had fun into the night," she said.
"Over $2500 was raised through ticket sales and fundraising of raffles, two 100 boards and games."
The popular annual occasion is organised by the CSU Student Representative Committee, Rydges Hotel and Julie Berry.
This year's event included performances from musician Chris Rose and DJ Jimmy Laing.
