Supporters can look forward to a waste-wise and plastic-free event thanks to a partnership between event organisers and DONE (Doppio or Nothing Espresso) Coffee.
All the vendors are on board with the environmentally friendly approach.
Event organisers said Port Macquarie was home to a lot of like-minded people who supported the environment and sustainability.
"We have a lot of great pioneers in our town in regards to sustainability and eco-friendliness," they said.
"It would be kind of wrong not getting on board and making the effort."
The Marina Street Food Markets are considered a waste-wise pilot for other events in the future.
Done Coffee is supplying compostable BioPak products to vendors or vendors will use packaging made from sugar cane pulp.
Done Coffee has sponsored Newcastle BioPak composting service provider, The Green Helping Hand, to visit Port Macquarie for the weekend to collect all the compostable products and food waste from the event and return it to Newcastle for composing.
The Rotary Club of Port Macquarie West will have a trailer at the event to collect cans.
The club will then make the most of the Return and Earn scheme with the proceeds to be injected into community projects.
The Marina Street Food Markets run from 3pm to 9pm on Friday, May 10 and noon to 8pm on Saturday, May 11 at Port Macquarie Marina.
DONE Coffee owner Stewart Clark has a big picture vision.
He said the aim was to start a compostable packaging pick-up service for local cafes.
"BioPak has a national compost collection from cafes in all capital cities and New Zealand, and DONE Coffee wants to have the first regional service in Australia," Mr Clark said.
His ultimate dream is for a facility to be located here to compost packaging from cafes and other businesses.
