Merle, as she's known to family and friends, celebrated the official century with a massive party by the water featuring five generations of relatives on Tuesday, April 16.
"It's lovely, family have come from all over the place," she said.
"There are some from South Australia, many from Sydney and a few from Queensland. It's lovely having all the family together."
The five generations of family members include her two daughters, Lynne and Judith, who were joined by family, neighbours and friends for the surprise party featuring balloons, cake and bubbly to mark the celebration.
The family includes four grandchildren, four great-grandchildren and two great-great-grandchildren.
Ms Doherty said she was starting to slow down as her love of gardening turned into spending time reading Danielle Steel and listening to music.
Along with a healthy moderation of scotch.
"I don't feel much different," she laughed, sitting in her favourite chair surrounded by relatives.
"I used to love my gardening and housework, I still love the colour of the garden.
"I'm still able to do most things but I am a little afraid of toppling over, and the family has stopped me from climbing ladders.
"Now I usually read something light in bed because I'm not a good sleeper, Danielle Steel or mystery and detective stories.
"I've had two scotches every night for years, one before and one after dinner."
Ms Doherty, originally from Narrabri in North West NSW bought a house in Port Macquarie during 1985 with her late husband.
She worked for around 15 years with hotel chain, Travelodge training their staff and personnel. She attests her health to staying active, keeping healthy and an interest in ballroom dancing.
"I've always been inclined to push myself if it seems like I cannot do it," she said.
"I was a mad ballroom dancer, that was always my life.
"Now my legs are not as good but I've always had pretty good health."
Edith shared her birth day with actor and choreographer, Charlie Chaplin.
