Mr Bisaro is competing in the state titles of the Australia Meat Industry Council competition.
Taking the top prize in two categories at a Mid North Coast level back in June, Mr Bisaro, owner of Waniora Village Butchery, is anxiously awaiting final judgment in the state finals for his entry in the Traditional Australian Beef category and Continental category.
“It is really great to think I am competing against the best in the business from right across the state,” Mr Bisaro said.
“Those who take out the category’s top prizes at a state level will then compete at nationals early next year.
“It would be great to be able to do that and know the product we are producing here is among the best in the country.”
Mr Bisaro said he is excited to head to Sydney on October 13 to find out who the state winners will be.
“I think it will be a good experience going to Sydney and mixing with butchers from all over NSW and ACT,” he said.
“It would be great to get another win but we will see what happens.”
After taking home wins at the Mid North Coast regional competition, Mr Bisaro said he was proud of his achievements.
“It was surprising but really great to take out two of the meat categories at the competition in Coffs Harbour.
“It was only the second year I have entered the competition and last year we placed with a third and equal second.
“So to win two categories and take second in another two this time is great.”
