Greg Bisaro is flying high after securing top place at the Australian Meat Industry Council’s Sausage King and Best Butchers Burger competition, Mid North Coast division, in Coffs Harbour on June 7.
Mr Bisaro said he only took over his shop two years ago after a 20 year hiatus, but said the win indicates that he is a cut above the rest.
“It was surprising but really great to take out two of the meat categories at the competition in Coffs Harbour,” Mr Bisaro said.
“It was only the second year I have entered the competition and last year we placed with a third and equal second.
“So for this time around to win two categories and take second in another two is great.”
Mr Bisaro is the owner of Waniora Village Butchery in Port Macquarie and won the Traditional Australian Beef category and also in the Continental category for his bratwurst.
“It was all a bit crazy, you aren’t actually allowed to go into the competition,” he said.
“We had to send our sausages and burgers to Coffs Harbour with no identifying features and all the entries are blind taste tested to find out who the winner is.”
Along with Mr Bisaro, Larry Dickson from the Port Meat Store also stole the competition taking first place in two burger categories.
Claiming the top prize for Best Butchers Beef Burger and Best Butchers Gourmet Burger for the beef and onion burger and port and cheese burger.
“It was great to take out the competition in two of the burger categories,” Mr Dickson said.
“This was the third time we had entered the competition but the first time we have entered our burgers and won – so that was really great.
“We decided to push the burgers this year as they have been increasingly popular and are one of our most popular products.”
He said he was proud that his burgers were above the rest tested on the Mid North Coast.
“I have been in the game for a while and with all the new butchers coming through it is good to know that we are still competing at a high standard,” he said.
