But she has taken time out of her hectic schedule – which includes working full time, looking after her two children and training every day – to pay homage to her old stomping ground.
Blencowe was a Mid North Coast fighter, based in both Port Macquarie and Taree, for several years where she became a world champion boxer – and she hasn’t forgotten her roots.
“I wanted to talk to you because this is my eighth year in my fighting career and I always think about where I first started,” she said.
“Years ago, my son was still in nappies and I was training in backyards, garages and small gyms in Port Macquarie.
“I’ve had coaches helping me along the way, and all the help has led me to where I am now.
“I’m training with training partners in the UFC, living in Sydney… but you can’t ever forget where you came from because it’s those humble beginnings in Port Macquarie and Taree that led me to where I am.”
Given her success it is fair to ask why she still works full time in Sydney when she could well be the champion of the second largest MMA organisation in the world.
“It’s not by choice, really. I’ve struggled to find good financial sponsorship,” she said.
“I have two children so I have responsibilities outside of fighting. I always look back to my amateur days where I travelled at my own expense.
“I always promised I’d never let my fighting take food away from my kids, and that means working full time as well then so be it.”
In January last year she was in Albuquerque training with Holly Holm and the likes of Alistair Overeem – huge names in the boxing and MMA world.
“I only had the one fight (in 2016), and was still having to work fulltime,” she explained.
“I took a step back and had a think. I juggled working fulltime, training and looking after my family and then I put myself up there (in Bellator) as number one contender, which has led to this fight with Budd.”
Blencowe is third in her weight division in the world, prompting Bellator to offer her a title fight.
“I’d never turn that down,” she said.
Money isn’t the be all and end all. I’m happy working hard and doing what I’m doing in life.

The UFC is perhaps the biggest sporting company in the world, and it’s where every fighter aims to be.
A world title win on December 2 could easily grab the attention of UFC boss Dana White.
However, Blencowe remains down-to-earth with no expectations.
“Circumstantially I don’t think he world title win will change anything in my life,” she said.
“I pushed for a UFC contract earlier in the year, and it was the only time I had an interest in the UFC, but they didn’t want me when I wanted to go.
“But it’s hard to say (if the UFC approach me) what I will do. I don’t like getting my hopes up for anything, but you never say never. I’ll just take everything in my life and career as it is.”
“Money isn’t the be all and end all. I’m happy working hard and doing what I’m doing in life.”
Despite the possibility of being catapulted to the world stage of the UFC, she knows she has to continue to put in the hard yards.
“All I can control is my work ethic. I have to make sure I tick all the boxes and see what comes,” she said.
