The cheese is a special double cream brie which is more luxurious that the average brie and has a smooth, expansive taste, to represent the stunning views from the landmark that has inspired it.
Lyndall loves Camden Haven and makes sure that she brings her workshops to the region at least once a year on her travels from her Coffs Coast base. Camden Haven's budding cheese makers and also people who have never tried cheese making before, enjoy her down to earth approach to making cheese - keeping it simple, cost effective and fun.
Lyndall is the author of The Cheesemaking Workshop book, a complete guide to home cheese making.

It is a beautiful region and the people are so friendly - across my visits so far, lots of locals have learned about cheese making and I've seen plenty of people with a real flair and passion for making great cheeses. Lyndall has created the North Brother Brie, to show her appreciation for Camden Haven. The new cheese will be available to try and create at Lyndall's workshops at Camden Haven Pilot Station, Dunbogan on May 2 and 3. Lyndall will be teaching how to make a variety of tasty and simple soft cheeses, including the North Brother Brie.
